Catching up on Recipes

So I have posted pictures of some meals lately and have had quite a few people interested in the recipes so here they are:

Fish Tacos

Ingredients
Frozen fish fillets
corn tortillas
pico de gallo
cabbage
sour cream or aioli

I made my own pico:
fresh roma tomatoes
serano chili
white onion
cilantro
garlic powder
cumin
salt & pepper
lemon juice

.....and aioli

Mayo
cilantro
serano chili
lemon juice
pepper

Let set in the refridgerator for at least 30 min.

Bake the fish fillet as instructed on the box, finely slice some cabbage, and top with salsa and aioli. I use 2 tortillas so nothing falls through. There you have it! Super simple and delicious! 




Mexican Pizza

Ingredients
pillsbury pizza crust
1 can black beans
roma tomatoes
frozen corn
green onion
cheese (mozz or colbi jack)
romain lettuce
pico de gallo
cilantro
aioli(same as from the tacos)

How To
pre bake the pizza crust
While the crust is baking heat the beans up in a microwavable bowl for about 1 minute or until tender. Mash the beans with a fork. Spread beans on pizza crust, layer with green onions, tomatoes, corn and cheese, bake longer according to directions on the crust package. Top with chop lettuce, pico, cilantro and aioli.  Really good, taste a lot like a  burrito but a different take on it. Fun way to mix it up, really fast meal for a busy night. 




Pulled Pork & Oven Fries

Ingredients
Pork shoulder roast
small white onion
garlic powder
kraft honey and garlic BBQ sauce
salt & pepper
Hamburger buns
Potatoes

How To
Spray crockpot with cooking spray. Slice onions and place on bottom of crock pot, place roast on top of that. Sprinkle roast generously with garlic powder. Add some salt and pepper then cover with BBQ sauce. I used 3/4 of the bottle. Cooke for 6-7 hours on low. When the roast has about 30 min left to cook open and shred with  fork, cover and let it continue cooking. 

Serve with finely sliced cabbage and a little mayo.

For the fries:
Preheat oven to 425. Slice potatoes, toss in olive oil. Add desired seasoning. I used salt, pepper, oregano, thyme, garlic powder and parmesan cheese. Line a cookie sheet with foil and bake for 35 min. They are perfectly crispy!
